- 5 Flensted Baked Potatoes (90152)
- 15 pieces of confit pork cheeks
- 5 pieces of butter-braised leeks
- butter
- milk
- potato chips
- 1 bunch of chervil
- pickled shallots
- ice cream
Preparation
Mashed Potatoes with Pork Cheeks
Peel the baking potatoes and set the peels aside.
Heat the potatoes and mash them into a purée.
Sauté the peels in butter until they're crispy, then add milk.
Boil the milk until it has absorbed the flavor and color of the toasted peels. Strain out the peels and set the milk aside.
Add the toasted buttermilk to the mashed potatoes and season to taste.
Serve the mashed potatoes with glazed pork cheeks, leeks, and the pickled onions.
Garnish with crushed potato chips and chervil.
