Moss
- 2 kg Danika Potatoes for Mashed Potatoes (010089)
- 1 kg celeriac, cut into strips
- Salt, freshly ground pepper

100 g Butter
Bacon topping
- 250 g sliced onions
- 500 g diced bacon
- 1 kg Vegetable Brunoise
- 250 g Diced apples
- ½ bunch of fresh thyme sprigs
- Salt, freshly ground pepper
Preparation
Moss:
Boil the potatoes and celery in unsalted water.
Drain the water and steam them until dry. Coarsely mash everything and season with salt, pepper, and butter.
Keep the sauce warm.
Bacon topping:
Sauté the onions and bacon over medium to medium-high heat until the bacon is crispy.
Drain off the fat, add the brunoise, and sauté for a few more minutes.
Add the apple and thyme, sauté for 1–2 minutes, and season with salt and pepper.
Pour it over the moss and serve immediately.
